My Valley table is level on all sides but has a low center(about .005"). The aluminum c chanels flex .040 to .050 with about 50 lbs.pressure on top. Should I shim the top of the c chanels?

.005 ( 1/200th of an inch ) is almost not even visible to the naked eye . My advise is not to put 50 lbs of pressure of your C channels . Are you saying your slate is warped ? You have a bad roll in the center of your table ? Bar boxes are pretty well made and using the adjustable casters you can get the roll , pretty much , dead on . I wouldn't shim as the weight of the slate is spread out throughout the bed , especially on the edge . good luck
